Orders arrive as they happen rather than on a schedule. An order placed at eleven at night is in your numbers at eleven at night.

Payouts are matched back to the orders that produced them, which is the step that normally gets skipped. Shopify pays you a batch; that batch is dozens of orders minus fees minus refunds. Matching it is how you learn what you actually earned.

Does it write to my store?

No. It reads orders and payouts. Your storefront, inventory and customers are untouched.

What about refunds?

They come through with the order they belong to, so revenue is net of them rather than overstated.
